Queanbeyan Carnivale – Multicultural Festival

 

I had to stop and clarify with a friend when she started to describe what sounded like a smaller Multicultural festival just across the border. Could it be? A festival in Queanbeyan that involves food which may have happening for years that I have never heard about?

The Queanbeyan Carnivale is on this Sunday and I am getting excited! One of my friends is performing and I’m hoping to make it out there to support her with a meat skewer in hand.

This is what I saw from the Visit Queanbeyan website but I’ve highlighted in bold what I actually read.

Queanbeyan’s Multicultural Spectacular

Queanbeyan celebrates it’s cultural diversity annually by holding the Multicultural Festival at Queanbeyan Park.  The festival features a stunning line-up of performances every year on the centre stage and sports plenty of great activities for the family, as well as dozens of food stalls.  The Carnivale theme was chosen to reflect on the energetic dance and music performances that abound from many different multicultural groups and the events lend the entire event a vibrant theme from the performances down to the food options which range from BBQs to sweet cakes to Asian delicacies.

Each year the park comes alive with all community groups working together to produce and offer the best in dance, food, and song to attendees. The result is quite diverse as Queanbeyan is home to many people including those from India, Macedonia, Serbia, Croatia, New Zealand, Indonesia, Greece, Italy, the UK, and more, with each group offering their own song and dance performances.

The Queanbeyan City Council supports the festival along with the Queanbeyan Multilingual Centre, and everyone is encouraged to head out to take part in the festivities.”

Pancake trial #1

The first thing that needs to be mentioned is that I broke the #1 rule when it comes to cooking in the kitchen- don’t do too much at once. So it probably wasn’t the best day to start frying up something new in the kitchen but it was Shrove Tuesday, I just told everyone about my New Year’s resolutions and I had to eat something for breakfast anyway. Simultaneously, I also had to make two different types of lasagne to feed 6 people and two separate lunches all before going to work, not to mention I had also slept in. A work friend had given TimmyC his favourite pancake recipe, so that’s where I started first. The recipe is from the Queen of food porn herself, Nigella Lawson and because I had zero idea, I followed it to the tee (to the best of my ability).


Nigella Lawson’s American Breakfast Pancakes

Ingredients

  • 1 tablespoon baking powder
  • 1 pinch of salt
  • 1 teaspoon white sugar
  • 2 large eggs (beaten)
  • 30 grams butter (melted and cooled)
  • 300 ml milk
  • 225 grams plain flour
  • butter for frying

Method

  1. The easiest way to make these is to put all the ingredients into a blender and blitz. But if you do mix up the batter by hand in a bowl, make a well in the flour, baking powder, salt and sugar, beat in the eggs, melted butter and milk, and transfer to a jug: it’s much easier to pour the batter into the pan than to spoon it.
  2. Heat a smooth griddle or pan on the stove.
  3. When you cook the pancakes, all you need to remember is that when the upper side of the pancake is blistering and bubbling it’s time to cook the second side, and this needs only about 1 minute, if that.
  4. I get about 16 silver-dollar-sized pancakes out of this.

I had thrown all the wet ingredients in my mixing bowl before remembering to make a well in my dry ingredients, which might account for the small butter clusters that I had, or maybe I didn’t cool it enough? I transferred my pancake mixture in a jug to allow for easy pouring and less mess, this is one thing I learnt from all the ‘pancake shake’ bottles. I found that I had to constantly change the heat of my pan to avoid burning my butter or pancake, although there was one time I was not paying attention and my pancake was a little browner than I would have liked. For me, this made around 10x 10cm diameter pancakes, which was good because I didn’t want to be eating pancakes of the next few days. I was amazed about how well this mixture cooked and made flipping the pancake super easy. I would definitely try this recipe again and maybe pay more attention next time. The yellow lumps don’t look promising but I’m frying them up anyway!IMG_9788Bubbles are forming, that’s a good sign.IMG_978750 shades of brown, all the various pancakes that I made that morning, you can tell which one I left on a little too long. I don’t love the look of the crispy edges, but sure do love the texture of them.IMG_9822 Of course I did the foodie cheat thing and put the prettiest pancake on top of my stack and instagrammed it immediately. 0:)IMG_9802 These pancakes tasted pretty good with just maple syrup but next time I might make cinnamon mascarpone, because everything tastes better with cimmon mascarpone. The first thing I needed to do was prove to myself that I could flip a pancake without it breaking into a million shards (the last pancakes I made were from a recipe I saw on instagram; tasted delicious but looked like I was trying to pan fry sloppy soggy oats. Recipe: 1 banana, 1 egg, 1/4 cup rolled oats, 1/4 tsp baking powder, pinch of salt, and some cinnamon. Blend until smooth, fry spoonfuls of batter in butter) I can only improve from here.

I have always been disappointed with the food choices when the beautiful Enlighten festival comes to Canberra. It always reminds me of the over priced, mediocre food that you would find at Floriade, but one event at a time.

This year, the Night Noodle Markets presented by Citi will coincide with the Enlighten Festival, bringing with it a whole lot of yummy food from interstate as well as some Canberra locals including Morks and Thirst Thai. I have finally found the list of vendors who will have a stall at Canberra’s first Night Noodle Market.

It’s Shrove (pancake) Tuesday today, so I thought I’d use this opportunity to move towards my New Years resolutions. I’ve successfully flipped 10 pancakes which is a huge thing for someone that hasn’t done it before. Next time I should make cinnamon mascarpone to go with it.

New Year’s Resolutions

So by now, most people who had made a fleeting fitness New Year’s resolution would have given up (if you haven’t good for you!). I on the other hand, have made another type of resolution that I’m sharing with you all in hopes to keep me honest and get me through to fulfilling them before the end of the year.

I want to cook several things this year, wait let me rephrase that, I want to cook several things really well this year. I may or may not have made them before and it might seem like simple humble items but they make a good basis for a classic cooking repertoire.

1) a bread like object

There are so many different types of bread, I’m not going to limit myself just to one. I’ve never worked with yeast before, but I love the smell of fresh bread (who doesn’t) and tasting warm bread with real butter is absolutely divine. If you have any recipes or tips that would be great!

2) a curry

I love a good chicken curry but if I can, I want to make a flavoursome tender red meat curry that basically falls apart as you put a spoon through it.

3) pancakes

it might seem weird but I’ve never made a successful pancake outside of the pre-mixed shaker containers. It has always been my dirty little secret as a foodie, but with Shrove Tuesday coming up, there is no time like present.

4) tarts

After my love of making cupcakes and my failure of making macarons (which TimmyC has definitely made up for), my next big love was going to be making tarts. I have made some but haven’t gotten around to getting to the perfect recipe. I think tarts are gorgeous, delicious and very instagramable.

5) ice cream/sorbet

My lovely sister gave me the ice cream Kitchenaid attachment possibly two/three years ago now and I’ve never done anything with it. In my defense, that was roughly when I met Mr Frugii and my need for ice cream was taken care of. I should really throw that thing in the freezer so when the feeling arises I can make ice cream straight away without delay.

 
There are probably other things that I also want to make but these 5 resolutions are a good start. If you have any ‘fool proof’ recipes that you would like to share, that would be super handy. Have you made any resolutions this year?

 

Welcome back, I’ve missed you

Whenever I’m in the Jamison area, I always check on the status of Dumpling Inn and when I checked this week I was pleasantly surprised to find the roller shutters up and they were open again for business. They have been opened since the 10th February and everyone must have missed them because they have been very busy ever since.

Shanghai Dumpling King – Erindale

It is finally opened! And this is what a fellow blogger had to say about it

Dumplings! Dumplings a mere five minute drive from my house! These words are music to my ears. Shanghai Dumpling King has opened in Erindale – as far as I know the first dumpling joint in Tuggeranong. Exciting times. I believe it opened on Monday night (I’ve heard mixed reports), and we headed there last night (Thursday) after work to check it out.

The laid-back restaurant and take-away is located in the newer area of the Erindale Food Mecca – next to Schnitzel Haus and La Piazza (or if you haven’t been for a while, the space that was formerly occupied by The Garden). There is a front counter, where you can order your take away, and about 7 or 8 tables off to the side. The space is open and minimalist, with lots of grey and black – it’s a very informal feel.
